feat(core): first implementation of r2gg-sql2pivot call

• add bdtopo dumps in tests/dev/dumps (marseille 10eme arrondissement)
• add docker-compose to expose postgis database with bdtopo dumps and a pivot table

⚠ For now test is skipped in test_cli_run_simple because it can't be run in CI

⚠ conversion scripts where updated to use geom column instead of geometrie column
